Food waste minimal

TOM Walker’s article about the disposal of sandwiches by Upper Crust at The City University, London lacks some fundamental facts (University under fire as sandwiches are binned after three hours, July 27).
 The food referred to in the article is produced and sold by the Upper Crust chain.
Its baguettes are required to be kept at an “ambient temperature” under the Food Hygiene Regulations 2005, which forbid food “for service or display” being displayed for a period of longer than four hours. This is true of all its outlets.
The waste is minimal. At the university, Upper Crust produces approximately 500 baguettes each day. Fewer than three per cent are wasted.
 As we stated to your reporter, but he chose to ignore, from September the university will be composting its food waste.
